Recipe for Bison Tacos

Bison Steak Tacos

Serves 4 Main course

Ingredients

  • 400 g bison steak (e.g. flank steak or cuvette)
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp chili (to taste)
  • Juice of ½ lime
  • Salt and pepper
  • 100 ml (⅖ cup) rice
  • 1 red onion, sliced
  • 1 bell pepper, diced
  • 1 tbsp chipotle in adobo
  • 8 small tortillas
  • Salsa
  • Guacamole
  • Lime wedges and flaky salt

Method

  1. Whisk soy sauce, olive oil, honey, chili and lime juice to make a marinade.
  2. Marinate the bison steaks for at least 2–3 hours.
  3. Remove the meat from the marinade, pat dry and season with salt and pepper.
  4. Sear the steaks on a hot pan or grill for 3–5 minutes per side, depending on thickness.
  5. Let the meat rest for 5 minutes, then slice thinly across the grain.
  6. Sauté red onion and bell pepper in a little oil for 3–5 minutes. Stir in the chipotle and season to taste.
  7. Fill tortillas with rice, vegetables and sliced bison. Top with salsa, guacamole, lime and a pinch of flaky salt.
Serving suggestion: Add fresh coriander, corn or pickled red onions for extra texture and freshness.
