Bison Tortillas

Serves 4 Main course Cut: chuck (tykkam)

Ingredients

Meat & marinade
  • 400 g bison chuck
  • 3 tbsp soy sauce
  • Juice of 1 lime
  • 2 tbsp sugar or honey
  • 2 tbsp rapeseed oil
  • 1 tsp chili (to taste)
  • Salt and pepper
Extras
  • 1 red onion, sliced
  • 1 bell pepper, diced
  • 1 tbsp chipotle in adobo
  • 100 ml (⅖ cup) rice
  • 8–10 small tortillas
  • 1 lime
  • Salsa
  • Guacamole
  • Flaky salt

Tip: Marinate the meat for at least 3 hours – up to 3 days for deeper flavor.

Method

  1. Trim & marinate: Trim excess fat and sinew from the chuck and cut into steak-sized pieces. Whisk marinade and coat the meat. Cover and refrigerate (min. 3 hrs).
  2. Prep sides: Cook the rice. Slice onion and dice pepper. Warm tortillas briefly in a dry pan.
  3. Sear meat: Remove meat, pat dry, season generously with salt. Sear over high heat for 5–7 minutes per side to medium/rosy. Rest 5 minutes; slice across the grain.
  4. Veg: Sauté onion and pepper 3–5 minutes until the onion caramelizes. Stir in chipotle; season to taste.
  5. Serve: Fill tortillas with rice, veg, and bison. Top with salsa, guacamole, a squeeze of lime, and a pinch of flaky salt.
Serving suggestion: Add corn, fresh coriander, or crisp lettuce. Bison is lean—avoid overcooking for best juiciness.
